Ingredients

2 T EVOO

2 chicken breasts-baked in over at 425 degrees for 35 min.

1/4 lb ham-cubed

1 lb bulk sausage (hot)

1 medium red onion-cut into wedges

2 celery stalks-finely diced

3 garlic cloves-minced

1 C converted rice

1 28 oz can diced tomatoes

1 C chicken broth

1 red pepper-diced

2-3 t cajun seasoning

2 bay leaves

1 lb large shrimp

1/4 C chopped flat leaf parsley

Preparation

Heat oven to 350 degrees. In dutch oven, heat EVOO, cook sausage. Revove; cook onions, celery, garlic, and peppers for 5 minutes. Add tomatoes, broth and rice and seasoning. Cook 5 minutes. Add bay leaves and chicken, ham and sausage. Cover and bake 35 minutes. Add shrimp, bake 10 minutes. Sprinkle with parsley; serve.
