Ingredients

3/4 pounds (3 sticks) butter, room temp

1 cup sugar

1 tsp vanilla

3 1/2 cups flour

1/4 tsp kosher salt

1 egg, beaten with 1 TBS water, for egg wash

7 ounces flaked coconut

raspberry or apricot jam

Preparation

cream butter and sugar until combined then add vanilla. in separate bowl, sift together flour and salt. add dry ingredients to creamed mixture and mix until dough comes together. dump on floured board and roll together into flat disk. wrap in plastic and chill for 30 min. roll dough into 1 1/4" balls. dip each ballinto egg wash and then roll in coconut. place on ungreased cookie sheet and press a light indentation into top of each. drop 1/4 tsp of jam into each indentation. bake for 20-25 minutes until coconut is golden brown. cool and serve
