Ingredients
2 cups coarsly grated zucchini
1 egg
1/4 cup flour
1/4 t baking soda
1/2 t salt
fresh ground black pepper
6-7 large basil leaves, chopped
1 finely chopped jalepeno pepper (seeds removed)
olive oil (enough to well coat pan)
Preparation
Grate zucchini and chop basil and jalepeno. Put in mixing bowl and add egg, flour, soda, salt and pepper. Meanwhile, heaat olive oil in saute pan. When oil is heated, spoon mixture into pan and flatten out. Four fit nicely into medium sized skillet. Saute about four minutes per side until golden.
