Ingredients

taters:

6 sweet potatoes

1 c. light cream

1/3 c. sugar

4 eggs

4 tbsp. butter

1 small/med jalapeno chopped finely

topping:

4 tbsp melted butter

1/2 cup brown sugar

1 c. corn flakes

1/2 c. pecans

bake it off @ 400

20 min. covered with foil

10 min. no foil to crunch/brown it up.

Preparation

super simple.

first peel, then bake the sweet potatoes at 350 for half and hour to 45 minutes.

prepare the topping while the baking goes down. by mixing all four ingredients in a bowl until thoroughly mixed.

put cooked sweet potatoes into a stand mixer with the flat beater. add remaining ingredients and blend on speed 2 or 3 for five minutes. (sugar may be omitted)

turn oven temperature up to 400. put mixture into oven safe dish and cover it with the topping.

bake time: 20 min. covered with foil 10 min. no foil to crunch/brown it up.
