Ingredients
4 cups Canola oil
1 1/2 c yellow cornmeal
1/2 c all-purpose flour
1 tsp baking powder
1 tsp kosher salt
1 tsp hot sauce
1/4 c minced green onions
1/2 c cooked, crumbled bacon
1 tbsp bacon drippings
2 jalapenos, seeded & minced
2 eggs, beaten
1/2 c buttermilk
Preparation
- Preheat Canola oil to about 350 deg F.
- Mix together cornmeal, flour, baking powder, salt, hot sauce, onions, bacon, and jalapenos.
- Stir in bacon drippings, eggs, and milk and mix till fully incorporated. If too dry, add a little extra buttermilk.
- Drop a tablespoon of dough into hot oil (max four at a time). Fry for 2-3 minutes or until golden brown.
- Remove and drain on paper-towel-lined plate.
