Ingredients

4 cups Canola oil

1 1/2 c yellow cornmeal

1/2 c all-purpose flour

1 tsp baking powder

1 tsp kosher salt

1 tsp hot sauce

1/4 c minced green onions

1/2 c cooked, crumbled bacon

1 tbsp bacon drippings

2 jalapenos, seeded & minced

2 eggs, beaten

1/2 c buttermilk

Preparation

  1. Preheat Canola oil to about 350 deg F.
  2. Mix together cornmeal, flour, baking powder, salt, hot sauce, onions, bacon, and jalapenos.
  3. Stir in bacon drippings, eggs, and milk and mix till fully incorporated. If too dry, add a little extra buttermilk.
  4. Drop a tablespoon of dough into hot oil (max four at a time). Fry for 2-3 minutes or until golden brown.
  5. Remove and drain on paper-towel-lined plate.
