Ingredients
1 box Cornbread mix (15oz)
OR 2 boxes x 7.5oz
2 eggs
1 cup buttermilk
1 can creamed corn
OR 1 can corn (drained) + 0.5 cup buttermilk, blended together to resemble creamed corn
1 large jalapeno or 2 small
1/8 cup oil
salt & pepper
Preparation
- Preheat over to 375F
- Mince jalapenos finely (without seeds)
- Blend corn if required
- Beat eggs with buttermilk
- Put cornbread mix into mixing bowl and make a well in the centre
- Pour eggs, corn, buttermilk, jalapenos into well and mix gently, add salt/pepper to taste
- Let sit for 5-10 mins
- Pour into two greased loaf tins (4.5 x 8.5)
- Bake 30 mins at 375, then lower to 350 for another 10 mins
- Check centre - knife should be clean
