Ingredients

1 box Cornbread mix (15oz)

OR 2 boxes x 7.5oz

2 eggs

1 cup buttermilk

1 can creamed corn

OR 1 can corn (drained) + 0.5 cup buttermilk, blended together to resemble creamed corn

1 large jalapeno or 2 small

1/8 cup oil

salt & pepper

Preparation

  1. Preheat over to 375F
  2. Mince jalapenos finely (without seeds)
  3. Blend corn if required
  4. Beat eggs with buttermilk
  5. Put cornbread mix into mixing bowl and make a well in the centre
  6. Pour eggs, corn, buttermilk, jalapenos into well and mix gently, add salt/pepper to taste
  7. Let sit for 5-10 mins
  8. Pour into two greased loaf tins (4.5 x 8.5)
  9. Bake 30 mins at 375, then lower to 350 for another 10 mins
  10. Check centre - knife should be clean
