Ingredients
English Muffin Bread
Cream Cheese
Sliced Colby-Jack Cheese
Chopped jalapeño peppers (canned is fine)
butter
raspberries
sugar
Preparation
1-2 cups of raspberries in a sauce pan with 1/4 cup of sugar and 1/4 cup of water. Cook the berries down to a syrup and set aside.
Take two slices of bread and spread each slice with a thin layer of cream cheese, on one slice add jalapeños and on the other slice 1-2 slices of Colby-Jack. Press the slices of bread together to make a sandwich. Lightly butter the outside of the sandwich.
Heat a fry pan to medium heat and grill each side of the sandwich until golden.
Cut the sandwich into four pieces and serve with raspberry dipping sauce.
