Ingredients
Pork Tenderloin
Breadcrumb ( Panko )
1 Egg ( Duck )
Milk
Flour
Can of chopped Tomatoes
4 to 5 cloves of Garlic
1 Onion
4 Gherkins
Bacon bits, cut up a rasher!
6 Mushrooms
1 Red Pepper, deseeded.
1 Red Chilli, deseeded
a dash, a glug, a shot of brandy
Cream, go for it!
A cup of fresh Basil
Salt pepper or other to taste
Preparation
Cut Pork Tenderloin into sections, 3! Batten, flatten, whatever, not too thin. Season pork with salt,pepper and other to taste. Dip pork in flour, egg and breadcrumb. Fry for a few minutes, each side to brown. Place in oven @ 180º for 30 minutes. Cover in foil, take foil off for last 7 minutes.
" The Sauce" Fry off the chopped onion, garlic, gherkins, red pepper, mushroom and bacon bacon bits in olive oil.Add can of tomatoes & seasoning. Simmer for 5 minutes. Add cream and Brandy to taste. At this stage you may puree, or leave the sauce rough, Your choice, Jake’s choice, rough! Serve with home made fry’s or mashed potatoe.
