Ingredients

12 Hard Boiled Eggs

8 oz Cream Cheese, Softened

1 tsp Yellow Mustard

1 tsp to 1 tbsp Frank’s Red Hot Cayenne Pepper Sauce (to your taste)

Salt and Pepper to taste

Topping: Chili powder or Cayenne Pepper (for taste and color)

Preparation

Peel and halve eggs, gently removing yolks and reserving white for filling. Mash yolks well. (METHOD HINT: Press yolks through a wire strainer to make finer.) Incorporate cream cheese, mustard, and salt and pepper, until well blended. Add Frank’s sauce to your taste, and mix till blended. Fill decorating bag with yolk mixture. Using a decorating tip (I like #16 Open Star Tip) generously fill egg whites with mixture. Sprinkle with your choice of topping. Refrigerate until ready to serve.
