Ingredients
large bunch of fresh arugala
1/3 C. crumbled Stilton cheese.
6-8 fresh figs, quartered
1/3 C. toasted sliced almonds.
For the Dressing:
1/3 C. walnut oil
2 TBL Fig Balsamic Vinegar
2 TBL Aged Balsamic Vinegar
1 Tsp. Orange Juice
1 large clove fresh garlic, crushed
salt to taste
Preparation
Wash and dry Arugala, remove any tough stems. Arrange in bowl. Sprinkle Stilton over top. Arrange fig pieces over top. Scatter almonds over figs.
Combine dressing ingredients with wisk and drizzle over the salad. Don’t drown the greens, keep it light.
