Ingredients

2-3 Eggs

1/3 c Sausage (sliced thinly in quarters)

1/3 c Tomatoes (diced)

1/3 c Bacon (chopped)

2 T Red Bell Pepper (small dice)

2 T Green Bell Pepper (small dice)

2 scallions (diced)

1/2 Jalapeno (small dice)

1 t Shredded Cheddar

1 t Sliced Swiss (diced)

1 t Feta

Salt TT

Pepper TT

Preparation

  1. Scramble eggs in small bowl with fork
  2. Sauté sausage, tomatoes, bacon, peppers, and jalapeno in small skillet pan on medium heat till lightly cooked (2 mins) lightly adding salt and pepper
  3. Add in egg, and add more salt and pepper
  4. Cook egg till cooked on both sides
  5. Sprinkle in all cheeses and fold egg over
  6. Keep over med heat for 15 seconds to let cheese melt.
