Ingredients

1 tbs butter

2 tbs oil

1 medium onion, chopped

1 stalk celery, sliced

3/4 cup green pepper

1 clove garlic, minced

1 8oz can stewed tomatoes

32 oz chicken broth

3 tbs hot Hungarian paprika

1/4 tsp thyme

1/4 tsp salt

1/4 tsp black pepper

1/2 cup long grain white rice

1 cup sliced cooked chicken

Preparation

In large saucepan heat butter and oil. Add onion, celery, green pepper, and garlic; saute 3-5 min. Add tomatoes, broth,thyme, salt, pepper, paprika, and rice. Bring to boil, reduce heat to simmer. Cover and simmer for 15 min. Add chicken and simmer for 5 min. or until rice is tender.
