Ingredients

1 lb. spinach

1/2 c. chopped onions

5 oz. thinly sliced prosciutto or pancetta, chopped

2 Tbsp. wine vinegar

1 Tbsp. lemon juice

2 Tbsp. olive oil

2 Tbsp. pine nuts

freshly ground pepper to taste

freshly grated Parmesan cheese

Preparation

Heat oil at medium-high in a large sauté pan. Brown meat and nuts. Add onion and sauté for 2-3 minutes. Add vinegar, lemon juice and ground pepper. Add spinach and toss until wilted. Sprinkle with cheese.
