Ingredients
3 oz prosciutto or bacon, chopped
2 T olive oil
1 T onion, finely diced
2 garlic cloves, minced
2 pounds spinach, chopped
1/4 tsp ground nutmeg
1 T Parmesan cheese
Preparation
Saute the prosciutto or bacon in the olive oil until desired doneness.
Add the onion, garlic, and spinach. Saute the spinach until it is limp.
Adjust seasonings with salt, nutmeg, Parmesan cheese and pepper. Serve immediately while still warm.
