Ingredients

2 lb extra lean ground beef

1 tablespoon oil

14 oz chopped tomatoes

1 pint beef stock

1 pack salad onions, chopped

1 green pepper, cored and de-seeded, cut into 1 inch strips

1 red pepper, cored and de-seeded, cut into 1 inch strips

6 baby zucchini, cut into strips

1 tablespoon tomato puree

3 tablespoons freshly chopped basil

Salt and freshly ground black pepper

2 oz fresh breadcrumbs

4 oz grated mozzarella cheese

Preparation

  1. Heat the oil, add the mince and cook for 10 minutes or until browned.
  2. Add the tomatoes, stock, onions, peppers, zucchini’s, tomato puree, 2 tablespoons of basil and seasoning, and simmer for 5 minutes.
  3. Transfer to an ovenproof dish and sprinkle over the breadcrumbs, cheese and remaining basil. Place in a preheated oven 200º 400ºF, Gas MarK 6 for 20-25 minutes until golden.
