Ingredients
1 tablespoon olive oil
1/2 cup green onions, sliced
2 garlic cloves, minced
4 6-oz skinless halibut fillets
Salt and pepper to taste
3 cups chopped fresh tomatoes
1 can (15.8oz) great northern beans, drained and rinced
2 teaspoons red wine vinegar
1/4 cup fresh basil leaves, sliced
Preparation
Preheat oven to broil
Heat oil in medium saucepan over medium heat. Add onions and garlic; cook stirring occasionally until softened but not browned (2 min).
Season halibut with salt and pepper to taste. Place on a baking sheet or broiler pan. Broil until fish is cooked through (5 - 7 min).
Add tomatoes to the saucepan mixture and cook, stirring occasionally, 4 minutes. Stir in beans, vinegar and basil. Bring to a boil; simmer for 1 minute. Remove pan from heat and set aside.
Serve fish over tomato and bean mixture.
