Ingredients

1 pound ground pork.

1/2 to 3/4 teaspoon salt.

1/2 teaspoon black pepper.

1 1/2 teaspoon fennel seed.

1 1/2 teaspoon paprika.

1 1/2 teaspoon sugar.

1 1/2 tablespoons red wine vinegar.

Preparation

Mix all ingredients well. Place in an air tight, plastic container. Let stand in a refrigerator over night (longer for better flavor). Use as you would bulk Italian sausage.
