Ingredients
½ Box Ditali Pasta cooked al dente
2 onions diced
2 carrots diced in small squares
2 stalks celery diced in small squares
½ lb bacon cut in ½ inch pieces, about 8-9 slices
10 cloves garlic sliced thin
1 28oz can dices tomatoes w/juice
1 28oz can tomato sauce
2 15oz cans cannelloni beans with the juice
1 15oz can Red kidney beans with the juice
2 15oz cans chicken broth
¼ cup fresh parsley
Salt & pepper to taste
½ cup Parmesan cheese
Preparation
- Cook pasta al dente according to box directions
- Fry bacon until crisp then remove to paper towel to dry
- In bacon fat sauté onions, garlic, celery and carrots on low heat for 10 minutes.
- Add all the beans w/juice, chicken broth, diced tomato & the sauce bring to a boil, reduce heat and simmer 10 minutes.
- Add the Pasta, Bacon, cheese and parsley cook one minute.
- Taste and season with salt and pepper
