Ingredients

3 tbs olive oil

1.5 pounds ground chuck

1 large onion chopped

1 tsp each of oregano, basil and thyme

3 or 4 cloves of crushed garlic or to taste

several shakes of red pepper flakes

1 egg

3/4 package of fresh spinach chopped or 1 10 oz box of thawed frozen chopped spinach drained

1/3 cup parmesan cheese

bread crumbs, I use flavored panko crumbs

Preparation

Saute onions and the herbs in olive oil until soft, add spinach and toss until wilted . Set aside to cool.

Mix meat, egg, cooled spinach miture cheese and add bread crumbs as needed to form loaves.

Form either 1 large or 2 small loaves.

Bake at 350 degrees for 1 and 1/2 hour. If desired , after one hour spread top of loaves with ketsup and return tp oven.

I make 2 loaves because there are only 2 of us and the rest freezes wonderfully.

Any leftovers make good sandwiches!
