Ingredients
8 ounces pepitte or other small to medium pasta
2 stalks celery, chopped
½ rotisserie chicken, shredded
2 roasted red peppers, julienned
2 tablespoons capers
Juice of ½ lemon
¼ cup fresh oregano, chopped
¾ cup mayonnaise
Salt and freshly ground black pepper
Preparation
Cook pasta according to package directions. Drain and place in a large pasta bowl. Combine pasta with remaining ingredients, mixing well. Chill until ready to serve. Serves 4.
