Ingredients
2 hearts of Romaine lettuce, torn
2 medium tomatoes, cut in bite size pieces
2 cups of mozzarella cheese cubes
1 pound thick peppered bacon, cooked and crumbled
1/2 cup crumbled feta cheese
1/2 cup black olives
3 tablespoons capers
3/4 cup light mayonnaise
1/4 cup ketchup
1 teaspoon garlic salt
1 teaspoon black and red pepper blend
2 tablespoons red wine vinegar
Garnish: Italian croutons
Preparation
In large salad bowl, combine lettuce, tomatoes, mozzarella cheese, capers, bacon, feta cheese and black olives. Toss gently. Set aside. In a blender, add mayonnaise, ketchup, garlic salt, pepper blend and red wine vinegar. Blend until smooth. Pour over salad. Toss lightly. Serve on individual serving plates. Garnish with Italian croutons.
