Ingredients

4 pound boneless rump or top round roast

12 cloves of garlic

3 Tbsp salt

3 Tbsp coarse ground pepper

3 Tbsp dried oregano

3 Tbsp dried parsley

Olive oil

8 Crusty sub rolls

Preparation

Make 12 slits on the top and the bottom of the beef roast. Place 1/2 clove of garlic and 1/4 tsp of each of the other ingredients inside each slit. Apply a thin layer of olive oil to the bottom of a roasting pan. Put roast in pan, cover and cook in oven at 325 for 60 minutes. Remove from oven add 2 cups of water and return to oven for 1 hour 15 minutes then remove the cover and cook for 45 minutes. Let roast cool and slice thin on meat slicer. Return meat to juices in pan and heat to warm but do not boil. Place meat on Italian Sub Rolls and add roasted green peppers.
