Ingredients
1 box Israeli cous cous
1 red pepper chopped
1/2 English cucumber chopped
1 mango diced
2 carrots diced
1/2 cup walnuts or pecans
1/2 cup raisins
1 cup fresh cilantro chopped
3 tablespoons red wine vinegar
1/4 cup olive oil
salt and pepper to taste
Preparation
Prepare cous cous as directed on box. Transfer cous cous to bowl and cool down prior to mixing the rest of the ingredients. Combine all ingredients together in bowl and mix. Serve Chilled
