Ingredients

1 woodeb box of salt codfish

1/2 cup fresh flat-leaf parsley

2 cloves crushed garlic

hot dried red peppers to taste or

2 minced fresh Jalapeno peppers

1/3 cup olive oil

1/8 cup fresh lemon juice

optional: cold pasta or cold potatoes

Preparation

Freshen codfish by soaking for 24 hours, changing water occasionally. Boil codfish until cooked; drain and put in refrigerator to cool. Loosely flake cold codfish and combine with fresh chopped flat-leaf parsley, crushed garlic, hot dried red pepper flakes or fresh minced Jalapeno peppers with seeds and membranes removed, olive oil and lemon juice. Serve by itself as an appetizer or with cold pasta or boiled potatoes on a bed of lettuce/greens.
