Ingredients
3 1/2 cup all purpose flour
1 cup white whole wheat flour
1/3 cup sugar
1 tsp baking soda
1 tsp salt
2 eggs
1 1/3 cups buttermilk
1/3 cup canola oil
2 cups golden raisins (or mix of raisins and currents )
all purpose flour for sprinkling
Preparation
- Set oven temp at 375 degrees.
- In large bowl, combine flours, sugar, baking soda, salt. Mix with a wooden spoon till blended.
- In another bowl, beat eggs. Stir in buttermilk, oil and raisins. Stir the liquid ingredients into the dry ingredients until mixture comes together to form a dough.
- Turn the dough onto a lightly floured board and knead gently til smooth.
- Divide the dough in half and shape each into a ball. Pinch the edges into the center and turn the balls over so the tops are smooth. Set them, smooth sides up on a parchment-lined baking sheet.
- With a paring knife, mark a 3/4 inch deep cross on the top of each loaf.
- Bake breads 25 or 30 minutes or until the are puffed and browned and sound hollow when tapped on the bottom.
- Cool on a wire rack. Cut into thick slices to serve.
