Ingredients

3 1/2 cup all purpose flour

1 cup white whole wheat flour

1/3 cup sugar

1 tsp baking soda

1 tsp salt

2 eggs

1 1/3 cups buttermilk

1/3 cup canola oil

2 cups golden raisins (or mix of raisins and currents )

all purpose flour for sprinkling

Preparation

  1. Set oven temp at 375 degrees.
  2. In large bowl, combine flours, sugar, baking soda, salt. Mix with a wooden spoon till blended.
  3. In another bowl, beat eggs. Stir in buttermilk, oil and raisins. Stir the liquid ingredients into the dry ingredients until mixture comes together to form a dough.
  4. Turn the dough onto a lightly floured board and knead gently til smooth.
  5. Divide the dough in half and shape each into a ball. Pinch the edges into the center and turn the balls over so the tops are smooth. Set them, smooth sides up on a parchment-lined baking sheet.
  6. With a paring knife, mark a 3/4 inch deep cross on the top of each loaf.
  7. Bake breads 25 or 30 minutes or until the are puffed and browned and sound hollow when tapped on the bottom.
  8. Cool on a wire rack. Cut into thick slices to serve.
