Ingredients
1 lb Mixed Dried Fruit
8 oz Self Raising Flour
4 oz Soft Brown Sugar
1/2 pt Strong Tea (Chilled)
1 tbl Syrup
1/2 tsp Mixed Spices
1/2 tsp Salt
1 Egg (Beaten)
Preparation
- Put dried fruit in a mixing bowl and pour over the tea.
- Set aside overnight.
- Stir in the remaing ingredients excet the syrup.
- Spoon into a lightly greased and papered 2 lb loaf tin.
- Bake until brown and firm to the touch.
- Turn out to cool on a wire rack.
- Brush the top with syrup to glaze.
- Best served with lots of butter!
