Ingredients

1 lb Mixed Dried Fruit

8 oz Self Raising Flour

4 oz Soft Brown Sugar

1/2 pt Strong Tea (Chilled)

1 tbl Syrup

1/2 tsp Mixed Spices

1/2 tsp Salt

1 Egg (Beaten)

Preparation

  1. Put dried fruit in a mixing bowl and pour over the tea.
  2. Set aside overnight.
  3. Stir in the remaing ingredients excet the syrup.
  4. Spoon into a lightly greased and papered 2 lb loaf tin.
  5. Bake until brown and firm to the touch.
  6. Turn out to cool on a wire rack.
  7. Brush the top with syrup to glaze.
  8. Best served with lots of butter!
