Ingredients
1 pound baby organic spinach
1 basket strawberries, hulled
2 orange or grape fruit
1/2 pound grapes
1/4 pound Roman cheese. shaved slices
Citrus Vinaigrette:
2 lemons juiced
1/2 cup extra-virgin olive oil
1 teaspoon thyme
salt and pepper to taste.
Preparation
Wash fruits and vegetables. Make Citrus vinaigrette, combining all ingredients and whisking until emulsified. Slice all fruit.
Put spinach in a bowl and dress leaves with vinaigrette. Add sliced strawberries, sliced grapes, sliced citrus sections and shaved cheese and incorporate.
