Ingredients

18 oz boneless skinless chicken

2 t olive oil

1/4 t seasoned salt

4.5 t lemon juice

3/4 t cumin

1/2 t ground ginger

1 C buttermilk

3 T peanut butter

3 T soy sauce

1 clove garlic (minced)

1 t dry mustard

1 t turmeric

1/4 t crushed red pepper flake (optional)

Preparation

Cut chicken into bite-sized pieces. Toss w/ 2 t oil, 1 t lemon juice, 1/2 t cumin, and seasoned salt. Sautée until cooked through.

In saucepan, combine remaining ingredients and bring to a boil, whisking constantly. Reduce until thickened.
