Ingredients

5 pounds boneless, skinless, chicken breasts

1 cup peanuts

1 cup peanut butter

3 Tbsp. red pepper flakes

3/8 cup coriander powder

1/8 cup toasted coriander seeds

2 tsp. minced garlic

1 cup chopped onion

3 Tbsp. brown sugar

1/2 cup soy sauce

1/2 cup oil

6 Tbsp. lemon juice

Combine all ingredients in food processor until blended.

Place chicken breasts on large roasting pan or sheet pan without crowding. Slather peanut mixture over top sides only. Bake uncovered in preheated 350 degree oven for 25-30 minutes.

Dressing for cole slaw:

1/4 cup apple cider vinegar

2 Tbsp. minced, fresh ginger

2 tsp. minced garlic

2 Tbsp. soy sauce

2 Tbsp. honey

2 Tbsp. sesame oil

3/4 cup vegetable oil

salt and pepper to taste

Preparation

Blend all ingredients together, but do not dress coleslaw until ready to eat.
